EYEFOODS NUT MIX: MAKES 3 ½ CUPS FOR A PARTY-SIZE BOWL
OPTOMETRISTS AND AUTHORS Barbara Pelletier and Laurie Capogna provide recipes — six times this year — from their book, “Eyefoods: A Food Plan for Healthy Eyes,” so you can educate your patients about the link between nutrition and eye health. This month’s recipe is dedicated to those who often find themselves overwhelmed in the kitchen.
Ingredients
• 1 cup chopped almonds
• 1/2 cup chopped walnuts
• 1 cup chopped cashews
• 1 cup pumpkin seeds
Directions
1. Mix all ingredients in a large bowl.
2. Pour contents of bowl into a serving dish for entertaining.
Tip: Store any remaining mix in the refrigerator for 2 to 4 weeks in a glass jar or storage container.
